whip up the perfect platter – a great way to entertain guests

 

Platters are a great way to entertain guests. Not only are they easy to prepare and serve, there’s always something for everyone on them! With so many different options on how to prepare a platter, understandably it can get a bit overwhelming trying to put together a gram-worthy board! Let us talk you through some of our top tips below.

 

The prep:

Before tackling the food, ensure you have your base sorted. A chopping board or wooden board works great. You want to make sure it’s not too small for your food, but also not so large that you’ll be left with empty spaces. Alternatively, having multiple boards of varying sizes can also work.

 

The food:

The key to platters is variety. Anything goes really, but we recommend selecting your products from a few key categories below to ensure there is a great mix of flavours.

 

  • SWEETS | Break up savoury flavours with some sweet treat items. We love using our Biscuit Bites, Rumballs or Tarts. For something even more fancy, cut up our NEW dessert Brownie into some bite-sized pieces.
  • CHEESE | Depending on how many people you’re serving, 1 –  2 different styles of cheese are a great place to start.
  • DIPS | Think hummus, chunky dips, pesto etc. Check out our delicious Chickpea Hummus Recipe here.
  • CRACKERS & BREAD | We have a great range of crackers that are great for dips, as bases for toppings or enjoying alone.
  • MEAT | Spicy salami, chorizo, ham…. whatever you fancy!
  • FRESH | Grapes, cherry tomatoes, strawberries etc.
  • EXTRAS | Why not add some marinated olives, stuffed bell peppers or nuts?

Looking for a way to use up those leftover Hot Cross Buns lying around? Why not try a classic bread & butter pudding with a twist, perfect for elevating this classic Easter treat. This pudding is perfect revitalizing those leftover less than fresh buns you may have.

 

Ingredients:

 

 

Method:
  • Preheat the oven to 180 degrees Celsius. Grease a baking dish with butter.
  • Leaving the hot cross buns stuck together, cut them in half length ways (this leaves you with a top half and a bottom half.) Butter the bottom half, and add this to your baking dish. Sprinkle raisins over, then add the top half on.
  • Mix eggs, milk, cream, caster sugar and vanilla essence together in a bowl. Pour this mixture over the buns and set aside to soak for at 10-20 minutes.
  • Bake in your oven for 30 minutes, ensuring that the top of the buns are golden and the custard has set.
  • To serve, dust with icing sugar and serve warm with whipped cream or ice cream.

 

Top Tips:

This pudding is also great for making a day ahead, simply heat up in a slightly warm oven covered with foil.

These creamed Hot Cross Buns are the perfect Easter sweet treat – our handcrafted Hot Cross Buns are a match made in heaven with whipped cream. 

This recipe is great for kids to have a go at creating as well – all you need is a variety of sauces, toppings and fillings and let them go to town!

  • Cut your Hot Cross Buns in half, then toast in the oven.
  • Remove & let cool slightly.
  • Once cooled, fill with whipped cream/fillings of your choice.
  • Top with sauces and toppings of your choice.

Method:
  • Heat up a frying pan and cook the bacon to your liking.
  • While the bacon is frying, cut the Hot Cross Buns in half and toast (we did this in the oven, but a sandwich press works just as well.)
  • Once the bacon is cooked, press it with a paper towel to remove excess oil.
  • Load up your toasted Hot Cross Buns with bacon, and top generously with maple syrup. Serve immediately.

Bread & butter pudding – a very popular British dish that has made its way to New Zealand as a scrummy dessert. Simple, fast and tasty – this recipe is a winner! The ultimate comfort food made with our Spicy Fruit Loaf and a drizzle of warm custard.

 

Or try Coupland’s Our Country Harvest Loaf, to make a perfect fruitless bread and butter pudding alternative!

 

Serves 6

 

Ingredients
  • 1 Coupland’s Spicy Fruit Loaf
  • 300ml Milk
  • 300ml Cream
  • 125g Butter
  • 5 eggs
  • 100g caster sugar
  • 4tbsp demerara sugar for on top of the pudding
  • 1tsp vanilla essence
  • 60g orange marmalade (optional)
  • Custard

 

Method
  1. Preheat oven to 180 degrees Celsius.
  2. Grease a cake or bread tin for your pudding, and lightly dust the edges with a little sugar.
  3. In a heavy based pot, bring the milk, cream, vanilla and butter to a slow simmer for 5 minutes.
  4. Whilst this is simmering, add the eggs and sugar to a separate bowl and whisk until smooth and pale in colour.
  5. Pour the hot cream mix over the egg and sugar mix, slowly whisking until mixed well.
  6. Slice the fruit loaf into strips.
  7. Start building your pudding by lining the base and sides of your tin with sliced fruit loaf to create a shell.
  8. Pour on some of the hot cream mix, repeating until all bread is used.
  9. If you are using marmalade, drop little dollops between each layer.
  10. Sprinkle with the demerara sugar, and bake for 25 minutes until golden brown.
  11. Allow to sit for 10 minutes before serving with room temperature custard.

Enjoy a simple hummus without tahini, it is refreshing, packed with feel-good vitamins and makes you go mmm… with every single mouthful.

A good dip is a must-have for any cheese platter, before you crack open that bottle of wine, allow some time to create this Hearty Winter Beetroot Chickpea Hummus, it is so easy and cheap to make (no tahini* required). Serve with Coupland’s Crackers with Sprouted Grain & Rosemary or Cracked Pepper & Rocksalt. Mmm… delish!

 

Hearty Winter Beetroot Chickpea Hummus

Total cooking time: 40 min

Ingredients

 

  • 1 (15 oz.) can of chickpeas, drained and rinsed
  • 1 cup of roasted red beetroot
  • 2 tbsp. extra virgin olive oil
  • Juice from 1/2 lemon
  • 1 garlic clove
  • 3/4 tsp. salt
  • 4 tbsp. iced water
  • 3/4 tsp. ground cumin
  • Coupland’s Crackers with Sprouted Grain & Rosemary or Cracked Pepper & Rocksalt.

 

Method

 

  1. Roast 1 medium sized red beetroot – to speed up the process, peel and cut into 1/2-inch wedges, toss with cooking oil and bake in a hot oven for 25 minutes at 204°C, until beets are tender. The high temperature will encourage maillard browning, which helps to create deeper flavours for each slice. Once cooked leave aside to cool (you can leave it in the fridge for a fast cooling).
  2. Place cold roasted red beetroot and chickpeas in a food processor and puree into a thick paste.
  3. Add olive oil, lemon juice, garlic, salt. Slowly drizzle in the ice-cold water. Blend for 2-3 minutes or until smooth and creamy. Add additional water to thin out to your taste preference.
  4. Add the ground cumin, pulse to combine.
  5. Taste and add more salt or lemon juice accordingly to your taste preference.
  6. Garnish with sesame seeds, if desired.
  7. Serve with Coupland’s Crackers with Sprouted Grain & Rosemary or Cracked Pepper & Rocksalt. Mmm… delish!

*Tahini: Tahini is a well-known ingredient in hummus, it is a smooth paste made from toasted, ground sesame seeds which has a light, nutty flavour.

Spoil yourself with these Stuffed French Toast Skewers

 

French toast is perfect for breakfast or brunch, it is simple and delicious, plus you will have so much fun making it.

Most of you have made French toast before, but have you tried French Toast on Skewers? Spoil yourself and the family with these Stuffed French Toast Skewers made with Coupland’s premium Our Country Harvest White Toast Bread, they are so simple to make, and surely it will brighten up anyone’s morning. Have kids in the family? Get them involved too!

 

Stuffed French Toast Skewers

Total cooking time: 30 min

 

Ingredients

 

  • 1 loaf of Coupland’s premium Our Country Harvest White Toast Bread
  • Strawberry jam
  • 1 tsp cinnamon powder
  • ½ cup creamy peanut butter
  • 1 cup sliced fresh strawberries (or bananas)
  • 4 large eggs
  • 3/4 cup of milk
  • 3/4 teaspoon vanilla extract
  • Maple syrup (or golden syrup)
  • Bamboo skewers
  • Additional maple syrup and sliced fresh strawberries (or bananas)
Method

 

  1. Spread jam over four slices of Coupland’s premium Our Country Harvest White Toast Bread, top with sliced strawberries, and sprinkle with cinnamon.
  2. Spread peanut butter over another four slices of bread, place them over the jammed slices to make jam peanut butter sandwiches stuffed with strawberries.
  3. Lightly grease a large flat pan, bring it to medium heat.
  4. In a shallow bowl, whisk eggs, milk, 3 tablespoon syrup and vanilla until blended.
  5. Dip the sandwiches in egg mixture, allowing each side to soak 10 seconds. Place sandwiches on heated flat pan, toast 3-4 minutes on each side or until golden brown.
  6. Transfer sandwiches to a cutting board, brush sandwiches with remaining syrup. Cut sandwiches into quarters.
  7. Prepare some bamboo skewers, alternately thread French toast quarters, halved strawberries. Serve with additional syrup and fruit.

Everyone loves meatballs!


Get your bibs out, it is meatballs and tomato sauce time. Everyone loves meatballs, but you’ll love them even better in a toasted Coupland’s Grain and Honey Roll. The perfect Saturday night dinner, so you can have a little bit of extra time relaxing.

This meatball sauce would be perfect on top of toasted Coupland’s Garlic Bread, and topped with delicious grilled cheese.

 

Serves 6

Ingredients

Meatballs

  • 250g beef mince
  • 250g pork mince
  • 1tsp garlic paste
  • 1 egg
  • 1tsp dijon mustard
  • Small handful coriander – chopped
  • 2tsp cumin powder
  • 1tsp ginger paste
  • 50g Coupland’s Breadcrumbs

Tomato Sauce

  • 500ml canned tomatoes
  • 4 fresh tomatoes – diced roughly
  • 1 onion – chopped
  • 2tbsp tomato paste
  • 1tsp dried oregano
  • 1 handful of basil – chopped

To Serve

  • Salt and pepper
  • Basil – chopped
  • 250g Anchor Sour Cream
  • 100g Mainland Smoked Cheddar Cheese
  • 5 Coupland’s Grain and Honey Rolls – halved and toasted

 

Method
  1. Mix all meatball ingredients together and form 16 even meatballs, refrigerate for 30 minutes.
  2. For the tomato sauce, saute’ the onions until soft, then add remaining sauce ingredients into a pot and simmer for 30 minutes until thickened and seasoned well.
  3. Shallow fry meatballs in a little oil until golden brown.
  4. Add the meatballs to the pot of sauce and continue to low simmer until cooked.
  5. To assemble the subs, place 2 slices of smoked cheddar cheese inside each long bun, top with 4 meatballs including plenty of sauce.
  6. Add a dollop of sour cream, and sprinkle with chopped basil.
  7. Serve hot.

Eton Mess Stack with fresh berries and soft, fluffy pikelets!

Try our take on an Eton Mess Stack that has a few surprises along the way. Get the kids involved in crafting this delicious treat – have fun and make something that looks and tastes incredible.

 

Serves 4 (3 pikelets per person)

Ingredients

 

  • 125g Cream Cheese
  • 125g Sour Cream
  • 4 x Coupland’s Meringue Nests
  • 1 lemon – zest
  • 1tbsp icing sugar
  • 12 (2 packs) Coupland’s Pikelets
  • 150g strawberries (fresh or frozen)
  • 150g blueberries (fresh or frozen)
  • 150g raspberries (fresh or frozen)
  • Mint leaves or baby basil to garnish

 

Method
  1. Whisk together the cream cheese, lemon zest, icing sugar and sour cream until smooth.
  2. Crush 3 or 4 strawberries and mix them through the cream cheese mix to create a marble effect.
  3. Start with 1 pikelet on a plate and spread with a little cream cheese mix.
  4. Add a few berries and sprigs of mint/basil before repeating the process twice, making a stack with the remaining two pikelets.
  5. For the top, spread the remaining cream cheese mix, adding chunks of meringue and berries before garnishing with mint/basil.

 

When berries are out of season, you could use slices of grilled stone fruit like nectarines, plums, and peaches.
